Do.T.E Don't Pet Nat Rosato Frizzante 2019

The rose-colored compatriot to the DPNM Bianco, the rosato rendition, based entirely on Syrah sees direct press before treading the same path of rest and refermentation (using a little Lambrusco must no less!) As with the Bianco, the carbonation here is mild but there is beauty in subtlety here: a nose of Shirley Temple and red berry Starburst punctuated by a briney, almost olive-like character and zippy acidity.
