Comunità Pinot Grigio Ramato 2023

A "thinking wine" but don't think too hard. It's more dense that your typical Pinot Grigio but that extra heft presents oodles of fuzzy orchard fruits perfect for your next rendezvous with a sharp cheese. 100% Pinot Grigio, hand harvested, foot tread and allowed to macerate on skins for 8 days. Fermentation with wild yeast from the vineyard and a full secondary fermentation was allowed to slowly complete with native bacteria throughout the winter and into spring.  6 months elevage in neutral puncheon, followed by 6 months in bottle.
